Kelly Jones, a board-certified specialist in sports dietetics, took to the airwaves for National Physical Fitness and Sports Month to share the message that potatoes are “an all-star food” that’s affordable, delicious and provides the nutrients needed to stay energized throughout the day.
Jones, who is a regular feature on broadcast news, participated in 24 TV and radio interviews on behalf of Potatoes USA in media markets spanning the country from Norfolk, Virginia, to Seattle, Washington. Watch a segment here.
Her message: Carbs are essential for staying energized and mentally sharp, whether you’re going for a run or a long day at work. But not all carbs are created equal, and the nutrient-dense spud can help you feel satiated and energized.
“Potatoes have something called resistant starch, which research indicates may help us feel full,” Kelly said. “This is especially true when it’s part of a balanced meal that includes plenty of protein and some fat, because those nutrients work together to stabilize blood sugar and provide sustained energy levels throughout the day.”
She also gave tips for convenient ways to eat potatoes at home that take less than 30 minutes to prepare. These included a hash brown breakfast bowl with frozen hash browns sautéed with vegetables and your choice of protein. She also suggested microwaving potatoes, then finishing them in a skillet, for a faster cooking experience, like with this turkey potato wrap.
