With help from our friends at the Northwest Potato Variety Development Program and Potato Variety Management Institute, we take a look at Echo russet, a high-yielding, long, medium- to late-season russet with cold sweetening resistance and excellent processing qualities. It is suitable for both the fresh and processing markets.
