MCLEAN, Va.-The Alliance for Potato Research and Education (APRE) released the following statement commenting on the study issued Aug. 4 in the journal Health Affairs that suggests eating healthy means spending more money on food.

Maureen Storey, Ph.D., APRE's President and Chief Executive Officer said, "Stretching the family's food budget is more important than ever and enjoying potatoes and potato foods are a delicious and nutritious way to help make every food dollar count.

"Today, we understand why potatoes-a potassium-rich vegetable-is  such a vital, affordable part of the diet. Potatoes, in any form, not only provide complex carbohydrates and dietary fiber, but they are also important sources of vitamin C, as well as many other micronutrients.

"The 2010 Dietary Guidelines recognized the importance of starchy vegetables, such as potatoes, recommending 2-8 cups per week, depending on total calorie requirements; however, the usual U.S. intake among adults is only 0.5 cups of starchy vegetables per week, far short of the recommendation," Storey said.

The goal of the Alliance for Potato Research and Education (APRE) is to support research and education on potatoes and potato foods and to be a part of the nutrition science discussion about how they can be part of a healthy, well-balanced diet.
