New-generation Potato Sought

Efforts to find a molecular biologist to help develop the next generation of potatoes are continuing at Washington State University.

Roy Navaree at WSU's Prosser, WA, research station says the position will be key in helping scientists explore nutritional enhancement of the potato.

In addition, the team will assist in the production of potatoes with elevated levels of antioxidants, particularly carotenoids and phenolics.

Another major focus is the analysis of asparagines concentrations, metabolism and gene regulation, and the relationship to acrylamide formation during cooking.

Qualifications for the position include skills in biochemistry, preferably with molecular biology experience. The candidate will conduct enzyme analyses, amino acid and antioxidant profiling using HPLC and antioxidant assays, particularly for anthocyanins and carotenoids.
